Made from 100 percent cold-pressed Blue Weber agave (Agave tequilana) from the Mexican state of Jalisco, this double-distilled agave spirit is a product that is second to none. This vintage was also produced with native Metschnikowia Agavae yeast. We can say without exaggeration that we have never had such an aromatic agave taste in our mouths. After talking to Porfidio mastermind Martin Grassl, we know why: during production, enzymes are used instead of heat to extract the sugar from the agave. The result? Less methanol, lots of agave. And a distillate with a distinct elegance that will increase enthusiasm for agave distillates immeasurably.
