Pernod Absinthe is a traditional French absinthe with a high alcohol content of 68%, a distinctive herbal character, and a history dating back to the early 19th century. It is made from carefully selected plants, including the famous wormwood from the Pontarlier region, green anise, and other secret herbs that give it its typical complexity and bright green to yellow hue.

Tasting Profile:

Color: Bright green to yellow. When water is added, it takes on a light green, opalescent hue.

Aroma: Distinctive notes of wormwood, grassy notes of hyssop, and citrus notes of lemon balm.

Taste: Fresh and intense, with pronounced wormwood softened by anise. Other herbs bring green, spicy, and slightly medicinal notes that enhance the complexity of the flavor.

Finish: Herbal, spicy, and long, with a lingering aftertaste of wormwood, anise, and aromatic herbs.

Recommended serving method:

Pour a small amount of absinthe into a glass. Place an absinthe spoon with a sugar cube on the rim and very slowly pour ice-cold water over it in a ratio of approximately 3:1 to 5:1. The absinthe will gradually cloud over and develop its herbal aroma.

About the Pernod brand:

The history of the Pernod brand is closely linked to the rise of absinthe in France. Henri-Louis Pernod began commercial production of absinthe in the late 18th century and in 1805 founded the Pernod Fils distillery in Pontarlier, France, considered the first major absinthe distillery in France. At that time, it was a drink exceptionally popular among artists, poets, and intellectuals.

Production of Pernod absinthe continued until 1914, when absinthe was banned in France. After a long period of prohibition, Pernod Absinthe returned to the market and is now produced at the distillery in Thuir according to a recipe found in a 19th-century manuscript. Production follows traditional methods and is carried out without added sugar, in accordance with current regulations.
