Chinaco Tequila Anejo is aged for 30 months in 35-year-old French and English white oak and American bourbon barrels. The result is a remarkably smooth and rich taste, a complexity that can be likened to a fine cognac.
Ninety percent of all tequila produced in Mexico comes from the state of Jalisco. Only four other states in Mexico can legally produce tequila, and the only brand originating from the state of Tamaulipas is Chinaco.
The Gonzalez family's 'El Rosillo' ranch produces more than 60 000 agaves each year. This quantity, together with other produce from other local farmers, guarantees a smooth supply for the distillery. In addition, each newly planted agave plant is related to the original parent varieties, which ensures the unrivalled consistency and quality of the resulting spirit.
Chinaco maintains the same production practices as in the beginning. The ripe agave hearts are quartered after harvest and roasted for approximately 12 hours, followed by crushing and pressing in an old sugar cane press.
This is followed by fermentation using the same species of noble yeast as in 1972, when the first batch was produced. Fermentation takes approximately 72 hours and this slow fermentation process contributes to the fruity and floral aroma that is inherent in Chinaco tequila.
Master distiller Juan Angel has overseen the entire distillation process for nearly 30 years, which takes place in two original copper alembic stills purchased in 1972.
It is aged in white oak barrels from France and England, some of which are over 35 years old. These give the spirit a subtle woody character.
Colour: Amber.
Aroma: Delicate aromas of pear, wild flowers, vanilla, baked apple with a touch of papaya and mango.
Flavour: Complex, full and balanced.
Finish: Fresh, spicy and slightly smoky.
