Four Pillars OLIVE LEAF is a premium Australian gin that combines the fresh intensity of olives with complex herbal notes and a completely new botanical approach. It was created as a tribute to Mediterranean cuisine, but was born in the heart of Australia's Yarra Valley.

It all started with the limited edition Cousin Vera Gin in 2015, which Four Pillars created with friends from the Spanish distillery Santamanía. That's when they discovered that gin and olives are a perfect match. A year of experimentation followed, and in August 2020, Four Pillars OLIVE LEAF was officially launched.

Botanicals:

The main ingredients are three types of extra virgin olive oil cold-pressed from olives and olive leaf tea from the premium Cobram Estate groves in Victoria.

These are complemented by:

  • Rosemary and bay leaf – they smell like a Mediterranean garden, even though they grow at Cama's home
  • Macadamia nuts and lemon myrtle – typical of the Australian terroir, adding modern depth and texture

Tasting profile:

Aroma: Fresh and herbal, with subtle notes of olive and citrus.

Taste: Textured, delicately spicy, with a harmonious transition from herbal freshness to a nutty finish.

Finish: Clean and round, ideal for a Martini or Spanish-style Gin and Tonic.

About the Four Pillars brand:

It all began in Australia in 2013 when three friends decided to produce a gin that would combine traditional craftsmanship with a modern approach and unique local ingredients. The brand name refers to the four "pillars" of gin: water, botanicals, distillation technique, and a passion for innovation.

The heart of the distillery is the Wilma copper still, custom-made by the German company CARL. It was named after the mother of one of the founders and was soon followed by other stills – Jude, Eileen, Beth, Coral, and Linda – all named after the mothers of the founders or long-time members of the team. Each of these stills is part of a story where a personal touch meets technological precision.

In 2015, the brand found a home in Healesville, in the heart of the Yarra Valley, where a former sawmill was transformed into a true gin paradise. The place quickly became a hub for gin lovers from all over the world.

Five years later, Four Pillars opened the Surry Hills Laboratory in Sydney – a space with working distillation equipment and a top-notch cocktail bar that is now a sought-after destination for gin fans.
