Svach's Old Well Single Malt Gin Barreled is an exceptional limited-edition barrel-aged gin that captivates with its unique base, distinctive peppery character, and subtle notes of barrel aging. This is the first batch of this gin, distilled in the winter of 2020, whose base is not ultra-smooth alcohol but a malty new-make spirit. This is precisely what gives it its unmistakable malty depth and sets it apart from ordinary gins.

Production:

The journey of this spirit begins at the Glokner Brewery, where a wort was prepared from the traditional Golden Promise barley variety. The subsequent maceration of herbs, spices, and peppers takes place directly in the new spirit, which would have become whiskey after extended aging. As a result, the gin has a more pronounced malty base, followed by a carefully crafted spicy profile. The main emphasis here is on pepper—pink pepper unfolds in the aroma, while the flavor is dominated by notes of black and Sichuan pepper.

To add complexity and roundness to the flavor, the gin was further aged for 8 months in a barrel. It spent a short time in a Kagor wine cask and then rested in a bourbon cask, from which it acquired a delicate color, greater depth, and a smoother profile. The result is a distinctive artisanal gin that tastes great on its own, over a cube of ice, or in cocktails. It also pairs excellently with less sweet tonics, such as “skinny” or “light” varieties, which won’t overpower its character.

This is the first limited edition of this gin; only 688 numbered bottles were bottled.
