The mountainous region of Oaxaca, home to Mexico's indigenous people. Altitude 1-2 thousand m above sea level. Traditional cultivation of sugar cane, coffee and fruit. And rum, which is produced by natural fermentation from organically grown sugarcane. Paranubes, locally known as aguardiente de caña, is a rum sourced from unspoiled nature.
Paranubes rum is created by the natural fermentation of fresh juice from local sugar cane that grows on José Luís Carrera's farm, without the use of pesticides or fertilizers. After natural fermentation comes distillation. The resulting unaged rum without added water is bottled by hand.
Rich in flavor, Paranubes Blanco is the basis of the aged version, which has matured in New American Oak barrels for 18 months. The rum is bottled at a strength of 53.8%.
Approximately 420 bottles from this lot will be available on our market.
Flavor Profile:
Aged in the tropical climate of Río Tuerto in Oaxaca, this rum retains the earthy sweetness and saltiness we know from the classic Paranubes Blanco rum. Added to this are distinct notes of vanilla, cocoa, tobacco and a subtle woodiness, which was reflected in the rum by the action of the barrel.
