Sudlička Plum - a traditional fruit spirit with an alc. content of 50% made from ripe plums.
Slivovitz is produced from quality plums, which are harvested and then sorted. They select only very mature plums. The plums are first processed with a spindle pump, which makes them into a mash but does not crush the pits. This is very important. The fruit is made into a ferment. This is obtained by fermenting the fruit in fermentation vats, without air. Fermentation is the most important process. The fruit is fermented for at least 60 days. The recommended storage temperature is 10-18 °C. They let the fruit ferment naturally, which is how the best plum brandy is made. For 1l of 50% fruit brandy they use 9-13kg.
