Fresh tropical gin, based on sugarcane distillate, is made from several types of citrus (sweet and sour oranges, tangerines, pomelo and three different varieties of lime). The whole fruits, together with the juniper, are loaded into a cane distillate, where they are left to macerate at 50 °C for 24 hours. Subsequently, other botanicals are added, among them the flower of the bougainvillea plant. It gives gin a floral aroma and sweetness.
Gin Sincere is created in Paraguay, from organic and locally harvested ingredients. From sugar cane, which forms the base of the distillate, to local citrus. In addition to juniper, other botanicals included in the gin are angelica root, star anise, orris root, cloves, cinnamon, red peppercorns, lemongrass and bougainvillea flower. All spices and herbs are grown organically.
The fruits, together with the juniper, are loaded into a cane distillate, where they are macerated for 24 hours. Finally, hand-picked bougainvillea flowers are added. The macerate is then distilled (citruses are still left in the cauldron), already together with the other botanicals placed in a basket through which the alcohol vapors pass. The result is a dark red gin with notes of exotic flowers.
The distillery where Organic Sincere Gin is produced is Fairtrade certified. This ensures fair conditions and prices for all farmers supplying their raw materials to the distillery. The sugar cane comes from its own fields, the distillery buys the rest of the ingredients from local farmers.
