Copalli Barrel Rested Rum is a clean and fresh rum that comes from a new perspective on rum production. This rum is produced in accordance with ecological principles on the Copal Tree farm, where sustainability and conservation are paramount.

Copalli Barrel Rested Rum is created with only three natural ingredients: freshly pressed sugar cane juice grown organically at Copal Tree Farm, pure rainwater and yeast. This rum is made without the use of molasses or added sugar, ensuring its purity and freshness. 

Distilled in a combination of column and pot stills, the rum is then aged in reused American oak barrels, allowing the rum to develop rich, sweet notes without the need to cut down additional trees for new barrels.

Copalli Barrel Rested Rum offers a rich and full flavor experience with deep notes of vanilla and caramel that are accentuated by aging in American oak barrels. The use of these barrels, which have previously been used for bourbon, brings a unique character to the rum and highlights the natural flavours of the sugar cane.

This rum is excellent neat, on the rocks or as a base for a variety of cocktails. Its complex flavour allows it to stand out in classic and new recipes, bringing life to traditional and modern blends.
