Once a by-product of sugar cane processing, rum is now highly valued when it comes to indulgence. This historic drink is made from the tough, dark brown sugar cane molasses. The fermentation of the mash is followed by distillation in the stills. Spring water is used to reduce the high alcohol content until the right strength is reached. As with whisky, the rum gains its characteristic color from its woody structure. As it matures, it develops a sweetness that enriches the taste of cocktails. Try a “Dark & Stormy”, which brings the bitter notes of lime and ginger beer, or a “Sling of Aphrodite”, which makes the heart beat faster with its cinnamon and apple aromas.
