Distillation takes place in the heart of London at the traditional Beefeater Distillery, where the entire process is carefully supervised by experienced master distiller Desmond Payne. The traditional method of macerating herbs in grain distillate for 24 hours (known as steeping) plays a key role, giving the gin a complex yet delicate character.

About the Beefeater distillery:
Beefeater is one of the last true London gins still produced in the heart of the British capital. Under the supervision of experienced master distiller Desmond Payne, gin is produced at the Kennington distillery using a recipe that has remained virtually unchanged since the 19th century.
The brand name refers to the legendary guards of the Tower of London, known as the "Beefeaters." Their strong connection to the city's history is symbolized by the gin itself – traditional, British, and honest.
The Beefeater distillery is housed in an impressive Edwardian building with a 1950s extension and retains authentic features such as Victorian copper stills and a botanical room where the raw materials for production are stored. It is here that the famous 24-hour maceration of herbs takes place, giving the gin its complex and harmonious flavor.
