Fresh and elegant, Chandon Brut is a reflection of the high altitude vineyards located in the foothills of the Andean highlands in the renowned Mendoza wine region.
The blend consists of Chardonnay and Pinot Noir and it is the location of the vineyards (at altitudes ranging from 1 000 to 1 200 metres above sea level) that allows them to achieve the optimum combination of ripeness and freshness.
Harvesting begins in early February to preserve the grapes' fresh acidity. However, it continues until March, which also brings out the typical liveliness of the Chardonnay variety.
State-of-the-art presses are so efficient that they minimise the time the juice is in contact with the skins, preventing unwanted bitterness. Primary fermentation takes place in stainless steel tanks. The racking takes place at the end of June, once the fermentation process is complete. Basic wines
are blended to achieve a complex and consistent style.
The wine is again transferred to stainless steel tanks for a secondary fermentation lasting 6 to 8 months. The wine is constantly stirred, which keeps the yeast in permanent contact with the wine. This makes it possible to create a creamy and rich character in the wine. It is then left to rest for at least 3 months to allow the aromas to combine - just as in the traditional method.
