Production:
Paranubes Caña Morada undergoes a wild fermentation process using native yeasts from freshly pressed juice, ensuring that every aspect of its production is as natural and organic as possible. Distillation takes place in a specially designed copper still with a hybrid design, where single distillation is carried out over 9 hours with careful temperature control at 85°, 80°, 65°, 20° and 5°.

Paranubes is a small Mexican rum brand originating from the mountainous region of Sierra Mazateca in Oaxaca. The rum is produced near the village of Río Tuerto under the guidance of local producer José Luis Carrera and continues a long tradition of producing sugarcane distillate, which locals refer to as aguardiente de caña.
The brand is committed to maximizing local production. It uses fresh juice from several local sugarcane varieties, spontaneous fermentation with native yeasts, and traditional distillation in a simple hybrid still. The rum is typically bottled without added sugar and without dilution with water.
