Paranubes Añejo American Oak is a distinctive Mexican rum from the Oaxaca region, made from the fresh juice of locally grown sugarcane. It is based on the flavor-rich Paranubes Blanco, which is then aged in American oak barrels. The aging process lasts approximately 18 to 24 months.
Production:
The rum is produced in the mountainous region of Río Tuerto using traditional methods and in small batches. Sugarcane of the Criolla, Morada, Dulce, and Dura varieties is grown on José Luis Carrera’s farm without the use of pesticides or industrial fertilizers. Production is thus closely linked to local agriculture and the long tradition of the spirit known as aguardiente de caña.
During production, fresh sugarcane juice is combined with juice that can ferment naturally in open vats for up to four months. Fermentation takes place with the participation of native yeasts from the surrounding environment.
This is followed by a simple, approximately nine-hour distillation in a hybrid copper still that combines a pot still and a six-column copper column. The individual distillate fractions are then blended again, and the rum is bottled without the addition of water at a natural strength of around 53.8%.
Aging in American oak adds more pronounced notes of vanilla, cocoa, tobacco, and subtle wood to the typical earthy sweetness, minerality, and slightly salty character of Paranubes.
