Peated Rum Pedro Ximénez is the first release of a peated rum from the Peated Rum Batch 1 series. It is a premium blend of rums aged 1 to 8 years that bridges the world of rum with the smoky character more typically associated with peated whiskeys. This variant was aged in a Pedro Ximénez wine cask, giving it sweeter fruity notes, a subtle depth, and an elegant sherry character.

The creation of Peated Rum was inspired by the question: why should only whiskey be peated? Eric Koster, owner of Schotman, therefore began experimenting with small batches of rum to determine whether a smoky aroma could be captured in rum. The result convinced him so much that the first full batch was produced, and the concept of peat-smoked rum was patented.

Production:

Fermentation takes approximately 504 to 535 hours. The distillate is a blend of rums from both column and pot still distillation. The first release of Peated Rum was bottled in the summer of 2021, with only 230 bottles of each variant produced, making it a highly limited collector’s item.

Tasting Profile:

Nose: Sweeter notes of raisins, almonds, mango, and pineapple, complemented by the floral aroma of oleander and a subtle smoky hint.

Palate: Strong, fruity-sweet, and layered. Notes of exotic fruit, almonds, raisins, and caramel emerge, supported by the character of the Pedro Ximénez cask.

Finish: Gently smoky, subtle, and warming, with a caramel and sweeter fruit finish.

Peated Rum Pedro Ximénez is among the less heavily peated variants of the first series. Nevertheless, it offers an interesting contrast between the higher strength of 53% alcohol, sweeter notes of sherry cask, and a gentle smoky finish. The aroma and taste feature raisins, almonds, mango, pineapple, and a floral hint of oleander. On the palate, caramel and subtle smoke emerge, giving the rum its distinct character without overpowering its fruity-sweet base.

Peated Rum Pedro Ximénez is a rum for connoisseurs seeking an unconventional blend of rum sweetness, sherry cask notes, and peat smoke. Thanks to its limited production, patented concept, and original style, it is suitable for tasting as well as a collector’s rarity.

About the Peated Rum brand and the producer Schotman:

Peated Rum is an original brand of peat-smoked rums, created by the Dutch company Schotman and its owner Eric Koster. The brand was born from a simple yet bold idea: to bring the smoky and peaty character known from the world of whiskey to rum.

Schotman is one of the newer companies in the spirits market, but thanks to Peated Rum, it has clearly distinguished itself from conventional rum production. Eric Koster began experimenting by smoking a small amount of rum and then aging it in a small cask. When it turned out that the rum could carry the peat smoke surprisingly well, the first limited edition of Peated Rum was created.
