Schotman Peated Rum Pedro Ximénez No. 2 is a limited-edition peated rum produced by the Dutch company Schotman. It builds on the original idea of Eric Koster, who asked himself why only whiskey should be peated—and created the first peated rum. He patented this unusual concept, and thanks to him, the Schotman brand brought a completely new flavor profile to the world of rum.
Production:
This edition was produced in a limited series of just 287 bottles. It was distilled at Distilleerderij de Bronckhorst and is a blend of rums aged 2 to 9 years. Distillation is a combination of pot still and column distillation. The rum first matured in bourbon barrels and then for 2 years in Pedro Ximénez barrels, which imparted notes of raisins, caramel, and a sweeter, wine-like depth.
The rum is unadulterated, uncolored, and unfiltered, and contains no additives. Thanks to this, it retains the authentic character of the barrels, the distillation, and the rum blend itself.
Tasting profile:
Nose: Pleasant and balanced, with fruity citrus notes, aromas of caramel, and sugarcane.
Palate: Distinctive and complex. Notes of raisins from the Pedro Ximénez casks, caramel, sugarcane, and a subtle earthy peat come through.
Finish: Long, warm, and slightly smoky, with a lingering note of raisins, caramel, and integrated peat.

The smoky character is nicely integrated here and does not overpower the other layers of flavor. Thanks to its 56% alcohol strength, it has a pronounced, concentrated character and is well-suited for slow sipping.

Peated Rum is an original brand of peat-smoked rums, created by the Dutch company Schotman and its owner Eric Koster. The brand was born from a simple yet bold idea: to bring the smoky and peaty character known from the world of whiskey to rum.
Schotman is one of the newer companies in the spirits market, but thanks to Peated Rum, it has clearly distinguished itself from conventional rum production. Eric Koster began experimenting by smoking a small amount of rum and then aging it in a small cask. When it turned out that the rum could carry the peat smoke surprisingly well, the first limited edition of Peated Rum was created.
