Product description
The Dalmore Constellation 1979 Cask No. 594 is an exceptionally rare 33-year-old Highland Single Malt Scotch Whisky from the Constellation Collection. It was distilled in 1979 and comes from a single cask, No. 594. It was bottled at 48.5% ABV.
This particular edition matured for a full 33 years in a single American white oak (Quercus alba) cask. The cask originated from the Ozark Mountains in Missouri, and during its long maturation, the whisky developed a rich, fruity, honeyed, and vanilla-like character.
Tasting Profile:
Color: Bright honey-gold.
Nose: Honey, peaches, nectarines, and vanilla ice cream, followed by fresh apple, pear, apricots, and lemongrass.
Palate: Rich and layered, with tangy pineapple, tropical fruit, and caramel fudge. Notes of lemon cake, almond frangipane, rosehip syrup, and macarons also emerge.
Finish: Long and fruity, with Bramley apples, peaches with cream, Turkish delight, spiced sorbet, and kiwi.
Constellation Collection:
The Dalmore Constellation Collection presents an extraordinary selection of individual casks and vintages from 1964 to 1992, chosen to capture the distillery’s evolution and character over several decades. The 1979 vintage existed in the collection in two different versions, and this variant comes specifically from cask No. 594.
The whiskey is presented in an elegant decanter featuring The Dalmore’s signature silver stag and comes in a luxurious gift box.
About The Dalmore Distillery:
The Dalmore Distillery is a Scottish single malt whisky distillery in the Highlands with a history dating back to 1839, when it was founded by Alexander Matheson. In 1867, descendants of the Mackenzie clan took over the distillery, and it is to them that the use of the iconic 12-pointed royal stag on the bottles is attributed, a symbol that references the clan’s ancient royal heritage.
The Dalmore is known for its robust and fruity spirit, which is designed from the outset to respond well to longer and more complex maturation. The brand is renowned for its emphasis on the careful selection of exceptional casks and its long-standing relationships with leading wineries and cellars, which result in rich and layered whiskies with a distinctive, luxurious style.
Today, master whisky maker Gregg Glass carries on the tradition of The Dalmore, while Richard Paterson remains the brand’s mentor. The Dalmore thus combines its historical heritage, precise work with casks, and an emphasis on the distinctive, elegant character of its whiskies.
