After the delicate fermentation phase is complete, they are immediately distilled in a traditional bain-marie-style pot still, which helps preserve the delicacy and character of the raw material.
Aging:
The uniqueness of this grappa lies in its long aging period of 85 months in oak barrels from the Scottish island of Islay. These casks impart an unconventional smoky and peaty dimension to the distillate, which elegantly blends with the floral character of the Pinot Grigio grapes. The result is a complex, long-lasting, and highly distinctive grappa with a pronounced influence of Scottish wood.

Pilzer is an Italian family-owned distillery from Trentino, one of the most respected producers of grappa, fruit distillates, and other fine spirits.
