Agalia: The taste of the land where lemons bloom La vita è bella - Life is beautiful. Especially in moments with Agalia agave brandy in the glass. However, the concept of agave brandy actually falls flat. Because what Agalia's four founders David, Michele, Federico and Augusto are serving here is not just a spirit made from the juice of the Sicilian agave (also known locally as zabbara). Rather, it is a tribute to the home of this exceptional plant, Sicily.
In addition to Zabbara, the recipe includes botanicals such as prickly pear, olive leaves and Verdello and Interdonato lemons. Sicilian sea water is also included - this is used in steam distillation, a special distillation process. The result is a crystal clear set of pleasant citrus notes, typical agave flavours and a long finish of freshness.
A little side note: each bottle of Agalia is decorated with a gold screen print and a handmade tile designed by a Caltagirone artisan in the colours of Agalia (blue for the sea, yellow for the sun, green for the agave). The four founders obviously know that the eye also delights.
