Dalmore Constellation 1991 Cask 1 is an exceptional single malt whisky from the Highlands, part of the highly sought-after Dalmore Constellation collection, which brings together vintages from 1964 to 1992. This 1991 release was aged for a total of 20 years and offers an exceptionally complex, deep, and refined character, typical of the prestigious The Dalmore whiskies.
Production:
Its maturation took place in three phases. First, it rested for 11 years in American oak barrels previously used for bourbon; then it was transferred to barrels previously used for 15-year-old Lepanto brandy for 6 years; and for the final 3 years, it matured again in a Dalmore bourbon cask. It is precisely this combination that gives it a richly layered aromatic profile, blending spiciness, fruitiness, subtle nuttiness, and refined sweetness. On the palate, the whiskey is rich, refined, and highly distinctive.
Tasting Profile:
Nose: Cinnamon, marzipan, nutmeg, Cuban cigars, peaches, apples, plums, pears, hazelnuts, sour cherries, pineapple, and Parma ham.
Taste: Brandy with grapefruit, banana pancakes, crushed almonds, Andalusian gazpacho, raisins, caramel fudge, fig cake, and mulled wine.
Finish: Long-lasting and smooth.
Serving:
It is intended primarily to be savored slowly, allowing its complexity and long, smooth finish to fully shine. Thanks to its gift packaging, it also makes a prestigious bottle for collectors and lovers of exceptional whiskeys.
About The Dalmore Distillery:
The Dalmore Distillery is a Scottish single malt whisky distillery in the Highlands with a history dating back to 1839, when it was founded by Alexander Matheson. In 1867, descendants of the Mackenzie clan took over the distillery, and it is to them that the use of the iconic 12-pointed royal stag on the bottles is attributed, a symbol that references the clan’s ancient royal heritage.
The Dalmore is known for its robust and fruity spirit, which is designed from the outset to respond well to longer and more complex maturation. The brand is renowned for its emphasis on the careful selection of exceptional casks and its long-standing relationships with leading wineries and cellars, which result in rich and layered whiskies with a distinctive, luxurious style.
Today, master whisky maker Gregg Glass carries on the tradition of The Dalmore, while Richard Paterson remains the brand’s mentor. The Dalmore thus combines its historical heritage, precise work with casks, and an emphasis on the distinctive, elegant character of its whiskies.
