The traditional plum variety Domácí velkoplodé from our orchards in the fruit-growing area of Lhenice gave birth to Slivovica Svach. The taste of this very old variety has not yet been matched by any new cultivars. We let our plums ripen for as long as possible. Then we pick them, sort them by hand and de-stem them very carefully. The fruit ferments for at least 60 days. We also add a very small amount of pips to the ferment, which results in an unexpectedly pleasant taste at the end. The plum brandy is left to age for at least 120 days after distillation with a very slow ramp-up. We produce it at 45% and 50% alc. Svach plum brandy is a spirit with a distinctive taste of the most classic plums and notes of hazelnuts.
