The most important factor in the production of drienkovica is the optimum quality and degree of ripeness of the fruit-root.
A first-class spirit can only be made from fully ripe fruit.
This stone fruit contains a lot of fruit acids, which ensure a strong and refreshing taste experience, and also contains plenty of vitamin C - about twice as much as a lemon.
The slow fermentation takes place at 15°C and lasts approximately 8 weeks.
After fermentation, the shavings are de-stemmed.
Gentle distillation produces lots of overripe fruit notes, fruit esters and then the bright aroma of fruit kernels. Overall, the shavings distillate has complex notes with a strong wild fruit character and hints of marzipan and bitter almonds.
