Skunk Rum Batch 2 is a bold, experimental rum from the SKUNK Rum series, which emphasizes long fermentation, high intensity, and a more sustainable approach to production. It draws inspiration from Jamaican rum-making techniques but uses organic Paraguayan molasses and its own experimental style.

Production:

This batch differs from the first edition in the yeast used. While Batch 1 used wine yeast, Skunk Rum Batch 2 ferments using wheat beer yeast. It is this yeast that gives the rum a distinctive aromatic profile reminiscent of wheat beer. Long fermentation, high alcohol content 69.3%, and a non-aged character create a rum with an intense aroma, concentrated flavor, and distinctive character.

The SKUNK brand was created with the aim of demonstrating how different fermentation and distillation methods can alter the character of rum. Each batch has its own identity, batch number, and individual bottle number. Production is limited and emphasizes sustainability—recycled glass, labels made from sustainable paper, and cork stoppers without the use of glue are used.

Aroma: Distinctive and intense, with a wheat beer character resulting from long fermentation with brewer’s yeast.

Taste: Strong, concentrated, and aromatic. The taste again reveals notes of wheat beer, complemented by a full-bodied rum character and the intensity of long fermentation.

Finish: Long, warming, and distinctive, with a lingering aftertaste of fermentation notes and high rum strength.

Serving:

It can be enjoyed neat, but given the high alcohol content, adding a few drops of water is also recommended. This will help open up the aroma and further highlight the flavor profile.
