Pear is made from quality pears that are very carefully selected and sorted. The pears must be very well ripened. Early pear varieties are unsuitable, as they contain a small percentage of sugars and a much smaller amount of aromatic substances.
The whole production process begins with the harvest. The pears are then fed into a large-capacity pear crusher, where they are crushed and then conveyed to a spindle pump, which grinds them into a pulp. The ripe pears are fermented for a minimum of 60 days, without access to air. The characteristic and aromatic elements are transferred to the distillate through this fermentation. This is why great emphasis is placed on it.
