Product description

KOVAL Bourbon is an organic, artisanal bourbon whiskey from Chicago that stands out for its unusual blend, clean production, and distinctive flavor profile. Unlike conventional bourbons, which are made primarily from corn and rye or wheat, KOVAL combines 51% organic corn and 49% organic millet. It is the millet that gives the whiskey its smoother, creamier texture and unique character, setting it apart from the classic American style.

Production:

The whiskey is produced at the KOVAL distillery in Chicago, the city’s first distillery since Prohibition. Every bottle is crafted from grain to final bottling under one roof—the organic grains come from family farms in the Midwest, are milled on-site, and distilled in copper stills using the “heart cut” method, which selects only the purest middle portion of the distillate. The whiskey is then aged in new, charred 30-gallon American oak barrels, and each bottle is bottled as a single barrel.

Tasting Profile:

Nose: Subtle sweetness, tart tropical fruit, pepper, and melted butter.

Taste: Vanilla, mango chutney, a subtle chalky note of millet, and a sweeter, starchy character.

Finish: Dried fruit, pepper, sulphured apricots, and the lingering warmth of peppery caramel.

On the palate, KOVAL Bourbon comes across as balanced, approachable, and at the same time unconventional. Alongside vanilla, notes of mango chutney, a subtle sweetness, and a spicier finish emerge, transitioning into peppery caramel. Thanks to this, it will appeal to bourbon lovers who want to taste something original yet still very drinkable. It tastes great neat or with a cube of ice.
