Svach’s Old Well Whisky Honeywine Oak Barrel Finish is a limited-edition Czech single malt whisky from the Svach Distillery, bottled for the Whisky Life Prague 2022 festival. It is the first five-year-old bottling of Old Well whisky and, at the same time, a highly unconventional release that showcases bold experimentation with casks and flavor profiles.
Production:
The whisky first matured for 3 years in a bourbon cask, then for 15 months in a third-fill Pedro Ximénez sherry cask, and spent the final 9 months resting in a European winter oak cask. It is this final cask that is exceptional—for 14 years, it was used to age Včelovina, a fermented mead, in Smolenice, Slovakia.
Despite its higher alcohol content of 51.5%, the whisky feels smooth and refined. It remains distinctive but is not harsh. A total of only 469 bottles were produced, making this edition a collector’s item for lovers of Czech whiskey and unconventional cask finishes.
Tasting Profile:
Nose: Honey and waxy notes, complemented by spiciness and a juicy hint of green apples. A subtle influence from the mead cask is evident in the background.
Taste: Delicate yet distinctive. It offers a honeyed, waxy character, spicy notes, and the fresh fruitiness of green apples. The higher alcohol content is well-integrated and does not feel intrusive.
Finish: Smooth, warming, and slightly honey-sweet, with a lingering note of spice, oak, and green apples.
Thanks to its finish in a mead cask, Svach’s Old Well Whisky Honeywine Oak Barrel Finish has acquired delicate honey and wax notes, complemented by the spiciness and juiciness of green apples. However, this is not a sweet honey liqueur—the Včelovina cask adds only an elegant and subtle touch that underscores the whisky’s smoothness without masking its single malt character.

It combines traditional Moravian methods with modern technologies, all in collaboration with the local Glokner brewery, resulting in products with a unique character.
